Today we are going to prepare a delicious dish with quail eggs.
Ingredients:
400 g red pepper
2 cloves of garlic
15 - 20 quail eggs
Salt
4 tbsps of extra virgin olive oil
200 g canned diced tomatoes
Our pepper was partially green. Nevertheless our dish was yummy. Certainly it would come even better with a red pepper in season.
Before you prepare this dish, make sure that you have some delicious bread at home to serve it with.
Preparation:
- Cut pepper into strips long like your forefinger.
- Put oil in a large pan. Saute the garlic cloves.
- Add pepper strips and stir.
- Close the lid. Cook pepper stirring every once in a while.
- When pepper is cooked, add diced tomatoes and salt. Continue to cook.
- After about 8 - 10 minutes add half a cup of water and cook a little more.
- Turn the heat off.
- With the help of a knife gently crack an egg and empty on a plate.
- Transfer the egg from the plate into the sauce pan. Crack and transfer one egg at a time.
- Sprinkle very little salt over the eggs in the pan.
- Close the lid. Cook for about 2 - 3 minutes until the eggs turn white on the top.
